Responsible for overall management of daily food production operations for Patient Meal Services, Physicians’ Dining Room, Cafeteria, and Catering.

  • Responsible for overall management of daily food production operations for Patient Meal Services, Physicians’ Dining Room, Cafeteria, and Catering.
  • Develops menus for all service areas ensuring nutritional guidelines are met when appropriate and collaborates with Manager and Registered Dietitians on staff.
  • Ensures that food items are received, prepared, and stored according to hospital, city, and national regulatory agency standards. Maintains high standards of quality, safety, and sanitation.
  • Ensures all food preparation, display, and service areas are maintained in compliance with all regulatory standards.
  • Acts as a liaison during health inspections and regulatory surveys. Follows through on recommendations and trains staff to maintain.
  • Responsible for overseeing and/or assisting with purchasing of food, supplies, and chemicals.
  • Utilizes cost controls to effectively maintain inventory, minimize waste and meet financial requirements.
  • Complies with purchasing contracts to meet compliance expectations, makes recommendations for food and supply items to maximize rebates and reduce waste.
  • Regularly Rounds in all service areas. Visits patients, rounds on staff, and in Physicians’ Dining. Establishes rapport and builds relationships with all levels of internal and external customers.
  • Monitors employee attendance for timeliness and accrual of incremental overtime utilizing KRONOS on a daily basis.
  • Develops staff schedules based on FPC and revises as needed based on PLUS and census to maintain productivity standards.
  • Responsible for interviewing, hiring, training, coaching, and counseling of staff in accordance with hospital HR policies.
  • Responsible for ensuring all required documentation is completed in a timely manner.
  • Provides education support for staff, ensures necessary certifications, and mandatory education is maintained.
  • Participates on hospital committees and is involved with leadership development programs.
  • Serves as a resource for community events and hospital wide public speaking.
  • Serves as a preceptor for externships for culinary students and preceptor for Dietetic Internship programs.

Reports To: Manager of Nutrition Services
Employees Supervised: Lead Cooks, Cooks, Food Service Workers preparing hot and cold food, Doctors Dining staff

Qualifications

  • Associates Degree in Culinary from an accredited culinary arts program or equivalent experience.
  • Minimum of 3 or more years of professional culinary leadership experience.
  • Active Member of the ACF, RCA, or AHP preferred.
  • Food Service Managers certification through the Texas Department of Health required.
  • Experience in a fast paced large scale setting, fine dining restaurant, hotel, country club, school, hospital, or retirement facility.
  • Healthcare experience a plus.
  • Comprehensive knowledge of food and catering trends with focus on quality, sanitation, production and presentation.
  • Experience in public speaking preferred.
  • Experience in budgeting and cost controls
